Mortar and pestles offer a rare example of a stable technology, surviving thousands of years without significant change and connecting their users to ancient culinary history, to the food we eat, and to an increased intensity of fresh flavors. When you use these stone or wood tools to grind spices into powder or make food into paste, you are using essentially the same tool as the Aztecs, the Celts, the Sioux, and the ancient Greeks, Egyptians, and Romans, to name just a few.
Join Chef Lauri Grizzle as she explains techniques to use mortar and pestles and demonstrates the creation of four mouth-watering dishes from basil-peanut pesto to honey, pecan-date rolls for you to taste; and with recipes available to take home.
